Family opens takeout sushi restaurant with dreams

Evie Jiang and Rita Chen want to make yummy food for people. They also wanted to offer cuisine that’s not already available in Rosemount. So the business partners and sister-in-laws decided to open a take-out sushi bar.

Fuji Sushi and Hibachi Restaurant opened Jan. 5. The restaurant is located at 15092 Claret Ave.

In the future the two hope to be successful enough to expand into a dine-in space but for now they will offer a large menu to-go. The menu includes cooked rolls, raw sushi rolls, sashimi, appetizers and hibachi grill cuisine.

Jiang said they are especially proud of their signature rolls. Most notably, Jiang said the Fuji and the Angry Dragon rolls are delicious. The Fuji Roll features shrimp tempura, salmon topped with spicy crab salad and chef’s special sauce. The Angry Dragon includes shrimp tempura, spicy tuna, avocado with spicy crab salad.

Jiang said her family has made sushi for a long time and they are excited to share good sushi with Rosemount. Chen lives in Rosemount and Jiang lives in Apple Valley.

“We are pleased to be here,” said Jiang.

So far business has been slow but Jiang said she hopes things will pick up as people learn about them.

“Come in and eat. It’s tasty,” said Jiang.

Fuji Grill and Sushi Bar will be open Monday through Thursday 11 a.m. to 9:30 p.m.; Friday and Saturday, 11 a.m. to 10 p.m.; and Sunday noon to 9:30 p.m.
