Kee Lo has worked in the restaurant industry since 1982 in one way or another. His family owns a number of restaurants throughout the Twin Cities. And so, when the former real estate agent needed a fallback, he decided maybe he should open his own.

Hong Kong Bistro opened in Rosemount on June 8. The restaurant offers quick, affordable Chinese fare. Using fresh ingredients, Lo said they will offer a wide range of entrees and appetizers.

Hong Kong Bistro does not use MSG in its food. Additionally, Lo said the restaurant will have options for those who are health conscious, including steamed vegetables and sauce on the side.

"We want to make sure and take care of our customers," said Lo.

The restaurant will focus on offering delicious food while also keeping costs down for consumers. To do that, Lo said the Hong Kong Bistro will use a different concept than most Chinese restaurants.

Customers will order at a front counter. Lo said by eliminating wait staff, the restaurant will be able to keep prices low. Lo said he's hopeful the new concept will be successful and that he'll be able to open additional stores.

Hong Kong Bistro is located in the former Pizza Hut building at 15065 Canada Ave. Lo and his staff have spent the last several months renovating the building inside and out.

On the inside, Lo said the kitchen was gutted to modify it for a different style cooking. Additionally, the buffet equipment was taken out of the dining room and the walls were painted and cleaned. Tables have been added and televisions installed.

Improvements to the outside of the building include a fresh coat of paint and the resurfacing of the parking lot.

While it's taken a lot of work and long hours to get everything ready, Lo said he's happy with the way things look. Now he just hopes others will come in and try them out.
