Column: Springing into the summertime
Memorial Day is our first long weekend of the summer. Then it's on to graduations, Father's Day, summer festivals, fairs, vacations, summer sports and reunions during the summer.
Many people including me have many outdoor projects that were on a side burner for years. The lawn, plants, shrubs that need trimming, cleaning and reorganizing the garage, washing windows and touch up painting projects. One project at a time!
As our temperatures get warmer and the days longer, menus and meal planning become light and quick. We enjoy more outdoor time as we shop and buy locally from farmers' markets. It's a treat after the hard tasteless fresh fruit we've bought during the past six months. The leaf lettuce makes up a tasty wilted lettuce salad or just lettuce mixed with mayonnaise, a little milk, vinegar and sugar to taste. The asparagus grown locally is so fresh from what you bought in the stores. We clean and fire up the grills to prevent the house from getting too warm. We know complete, healthy meals can be made on the grill with just a little advanced planning. There are so many wonderful new and old recipes that are healthy. Introduce something new and different with produce that is in season to your family. How about kabobs, salmon or pork chops. You'll be surprised by their reaction.
Our weather has been so unpredictable this year. With the forecast of tornadoes and storms moving north, we will enjoy one day at a time. Do what we can when we can.
For now let's finish those projects, plan the menu, go shopping and have a party before we are invaded by mosquitoes. Remember to check for ticks after you have been outside. Don't forget the children and your pets with a daily check, especially in the hair or fur coats.
Finally, if you are driving, please allow enough time for the trip in case you have construction detours or hiccups. Make sure your vehicle is working properly. If you are driving whether it's a boat, RV, motorcycle or car, don't drink and drive. One moment can change your life or another family's life forever. Have a great Memorial Weekend.
2 pounds of sirloin steak cut in 1-inch cubes
1/3 cup olive oil
1/4 cup soy sauce
2 tablespoons red wine vinegar
2 teaspoons garlic powder
2 summer squash cut in slices
1 big onion cut in eight sections
1 green and one red pepper cut in 1-inch cubes
Combine oil, soy sauce, vinegar and garlic powder in zip lock bag. Add beef and seal. Marinate for one hour. Drain and discard marinade. Alternately thread meat and vegetables on skewers. Grill over medium hot heat for eight minutes and meat reaches desired doneness. Cover grill and turn occasionally.
